With lashings of cream this is a real Halloween treat.
Instructions
step one - Sieve the icing sugar and the plain flour into the large bowl.
step two - Cut the butter into squares and add to the flour/sugar mix. Knead in with finger tips until you get a fine bread crumnb.
step three - Seperate 2 eggs and add just the yolks to the mixture, making into a soft dough. Place dough in the fridge for half an hour.
step four - Once chilled roll the dough out thinly and place in the flan dish placing excess to one side for later use.
step five - Place the pumpkin in the microwave for 5 minutes with a little water. Drain off water then puree in the blender.
step six - Break the 5 remaining eggs and seperate the yolks from the white.
step seven - Place the sugar, egg yolks, double cream, spice and pumpkin into a pan and mix well. Then slowly heat until the mixture thickens slightly.
step eight - Pour into the flan dish.
step nine - Roll out the remaining pastry and cut out three bat shapes. Place on the top of the tart and cook in a hot oven for 15-20 minutes. Then turn down oven to a medium heat and cook until bats turn light brown.
