Instructions
step one - Place the flour, salt in the large mixing bowl. Cut up half of the butter into small cubes and rub in to create 'bread crumbs.'
step two - Warm the milk and mix in the yeast. Melt half of the remaining butter and add to the mixture.
step three - Pour the milk, yeast and butter mixutre to the flour and mix until it becomes a soft dough. Drape a tea-towel over the bowl and leave to rise for around 45 minutes in a warm place.
step four - Take the remaining butter and melt. Now add the dry ingredients mixed fruit, sugar, nutmeg and cinnamon. Gently simmer for 10 minutes.
step five - Allow this mixutre to cool. Seperate the egg and add the yolk only to the mixture, stiring well.
step six - Split the dough (once risen) into four equal parts. Then roll each one out so they fit the cake tin.
step seven - Grease or line cake tin with greased paper and place one of the dough rounds into the base of the tin.
step eight - Beat the egg white and brush around the outside of the dough. Take one third of the mixed fruit and spice mixture and spread across the middle of the dough, up to the edges but not over where you placed the egg white.
step nine - Repeat this process, building up the layers of your cake.
step ten - Place in a preheated oven 400f - 200c- Gas mark 6, for an hour.
step eleven - Ten minutes before cake is cooked remove and brush surface with egg white. Once cooked remove and allow to cool. To get the best from this cake allow to sit in an air-tight container for at least 2 days.
