Craft Ark Project - Seasonal Christmas - Easy Stollen
Stollen is centuries old German bread rich with eggs, milk and butter. The recipe varies but it is almost always shaped in a tapered oval. At Christmas time Christmas-stollen is filled with mixed. Legend has it that bakers shaped the stolen to represent the baby Jesus in swaddling clothes whilst others braided the bread with using three braids to represent the trinity. The most famous stolen comes from Dresden in Germany

Project Shopping List

  • 4 cups of plain white flour
  • 1 teaspoon of salt
  • 1 packet of dry yeast
  • 1/3 cup of fine sugar
  • ½ of warm milk
  • 200 grams (8 oz) of unsalted butter
  • 2 cups of dried mixed fruit
  • ½ cups of almonds
  • Grated zest of a lemon
  • Grated zest of an orange
  • Icing sugar
  • Large bowl
  • Small bowl
  • Sieve
  • Mixing spoon
  • Glass
  • Teaspoon
  • Baking tray

  • Instructions
    Step One - Place the yeast in the warm milk and dissolve.
    Step Two - Sift the flour and the salt into the bowl and make a well in the middle.
    Step Three - Cut the butter into small squares and place in the small bowl. Add the sugar to this bowl and mix well Add the milk and mix.
    Step Four - Add this mixture to the flour and salt in the larger bowl and mix well to form a soft pliable dough.
    Step Five - Flour your work surface and knead the dough for a couple of minutes. Replace into the bowl and allow to stand in a warm place for an hour.
    Step Six - Place the remaining dry ingredients into a clean bowl and mix together.
    Step Seven - Place the dough on the work surface and knead in the dry ingredients.
    Step Eight - Allow the dough to rest for another hour.
    Step Nine - Preheat the oven to 375°f (190°c or gas mark 5).
    Step Ten - Remove the dough from the bowl and shape into a large oval.
    Step Eleven - Brush the surface with a little melted butter and place on a greased baking tray.
    Step Twelve - Bake for around 20 minutes until the top has browned and when a skewer is pushed in it comes out clean.
    Step Thirteen - Allow to cool then dust lightly with the icing sugar.
