 Gingerbread dates back in Europe to around the 11th century. There were many different variations of gingerbread with some being soft, others hard, some very dark and others far lighter. Gingerbread figures were often available at fairs and local churches would fashion biscuits into figures of saints or other religious figures, perhaps this is where gingerbread men came from.  Traditional mince pies were really made with different spiced meats. During medieval times the pies were often baked in an oblong shape which represented Jesus’ crib. It was also considered essential to add three spices (nutmeg, cinnamon and cloves) as these represented the three gifts given by the three kinds.
